INGREDIENTS:
- One corn cob, kernels removed, approx. 1/2 cup
- 1/2 cup red onion
- 2 cups of diced zucchini
- 1 14.5 oz. can of fire roasted tomatoes undrained
- 2 Tbsp red wine blend
- 1 whole avocado diced
- 1/2 cup sour cream for garnish
- 1 tsp garlic salt
- 1 tsp corriander
- 1/2 tsp chili and cumin powders’
- 1/4 tsp chipotle powder
- fresh cilantro if desired for additional garnish
instructions:
In a medium skillet, heat olive oil 3 minutes, add all vegetables except tomatoes cook all vegetables until done, add wine, tomatoes with juice and spices. reduce to low heat cover and simmer for 10 minutes. Uncover and cook until most of the liquid is absorbed. Garnish with diced avocado and sour cream, serve with corn tortillas

This simple flavorful dish is good on its own or you can add variations, use vegan sour cream and there you have it. Try adding legumes like pinto’s, black beans, lentils. How about grilled chicken, pulled pork, shrimp or fish. Or try it with bow tie pasta, skies the limit, hope you enjoy. Happy harvesting!
